The objective of this study was to evaluate the effect cryoconcentration assisted by centrifugation-filtration on bioactive compounds and microbiological quality aqueous maqui (Aristotelia chilensis (Mol.) Stuntz) calafate (Berberis microphylla G. Forst) extracts pretreated with high-pressure homogenization (HPH). Aqueous were prepared from fresh fruits which treated HPH (predefined pressure number passes). best pretreatment determined aerobic mesophilic, fungal, yeast counts. Treated frozen at −30 °C in special tubes centrifuged 4000 rpm for 10 min obtain cryoconcentrated product. optimal conditions 200 MPa one pass exhibited no microorganism Cryoconcentration freezing subsequent a single cycle showed high process efficiency (>95%) both soluble solids (total polyphenols anthocyanins) antioxidant capacity extracts. treatment is an efficient technology concentrates good content compounds.
